Welcome to my ScandinAsian food blog. A blog about what I like to make in my little Norweigan kitchen, from homemade meals to fun creative sandwiches. My parents gave me the name Sorieya, a Cambodian name, which means sun. I'm originally from the United States. Now I'm currently living in Norway, married to a Norwegian man with 3 beautiful children. It's hard being away from my family back in the States and I miss them everyday. I am not an artist but I love making fun sandwiches for my kids. I am not a professional chef but I love to cook and I love being in the kitchen. I love introducing my children to different kind of international food, introducing food from my childhood and explaining to my kids the history about their culture and food. I love spending those quality time together teaching my little ones how to make bread, Khmer food, and teaching me Norwegian. My Norwegian isn't that great but I do understand just the basics but speaking it, that's another story.

My Chewy Peanut Butter Chocolate Chunk Cookies




I had the urge of baking cookies because all the post on my pinterest was all about sweets and cookies. So I thought what the heck lets do some baking and I also promised my son I would bake some cookies for him and would be ready when he comes home from school. 
All I had to get at the grocery store was flour, chocolate, and brown sugar. The rest I had sitting in my kitchen. These were easy to make and smell great when walking into my kitchen, fresh baked cookies. I've baked about 50 of these cookies. My husband loved it. They were chewy, yummy, and tasty. I made a lot and gave some to my son's teachers. My son is begging me to make more.


2 1/4 cup all purpose flour
1 teaspoon baking soda
1 teaspoon salt
2 stk butter, at room temperature
3/4 cup granulated sugar
3/4 cup packed brown sugar
1 teaspoon vanilla extract
1 medium egg
1/3 cup apple sauce (The only apple sauce I could find was a brand from Nora naturlig lett with mer frukt, mindre sukker eple m/biter. In English which means Natural light with more fruit and less sugar)
2/3 cup peanut butter 
2 1/2 cups chocolate, chopped into bite size

In a bowl combine flour, baking soda, and salt. Set a side.

In another bowl add butter (I melted my butter in a saucepan before mixing other ingredients together) sugar, brown sugar, vanilla, whisk until well combined and creamy. 

Add in egg and apple sauce. Mix well. 

Then stir in flour mixture, stir until well combine. 
Stir in chopped chocolates and peanut butter. 

Drop about a tablespoon each of the cookie batter onto a non greased baking sheet.

Place the tray in the center of the oven and bake at 200 degrees Celsius for 6-8 minutes.
Remove from oven and let cool for couple minutes. Then it's ready to be gobble down.
