Welcome to my ScandinAsian food blog. A blog about what I like to make in my little Norweigan kitchen, from homemade meals to fun creative sandwiches. My parents gave me the name Sorieya, a Cambodian name, which means sun. I'm originally from the United States. Now I'm currently living in Norway, married to a Norwegian man with 3 beautiful children. It's hard being away from my family back in the States and I miss them everyday. I am not an artist but I love making fun sandwiches for my kids. I am not a professional chef but I love to cook and I love being in the kitchen. I love introducing my children to different kind of international food, introducing food from my childhood and explaining to my kids the history about their culture and food. I love spending those quality time together teaching my little ones how to make bread, Khmer food, and teaching me Norwegian. My Norwegian isn't that great but I do understand just the basics but speaking it, that's another story.

Stir fry ground pork with bok choy and rice flake


Something quick and easy for dinner. Stir fried ground pork with bok choy and rice flake.
I bought most of my ingredients at the Asian Market. They have awesome and great quality of fresh produce. I just love going there. I was craving for some noodle dish today. So I drove all the way to Hoang Asia Mat at Sandvika. 

Ingredients
1 medium onion, chopped
3 clove garlic, minced
1/2 to 1 tablespoon red curry paste
1 tablespoon fresh chopped coriander
1/2 cup fresh bean sprouts
1 large bok choy, chopped
1 package rice flake
1 package ground pork
oyster sauce, fish sauce, soy sauce 
sugar
cornstarch
black pepper
turmeric powder

Minced garlic, chopped onion, chopped fresh coriander
 Fresh bean sprouts and fresh bok choy
 A package of Rice Flake 
 400g Ground Pork. I seasoned with oyster sauce, salt, pepper, seasoning sauce, corn starch, and turmeric powder.
 In a skillet on high heat add 1 tablespoon coconut oil, when oil is hot add minced garlic, chopped onions
 Stirred in a tablespoon red curry paste
 Stir in seasoned ground pork, mix well, cook until tender for 7 minutes
 Add in fresh bok choy
 Stir well, add 1 tablespoon seasoning sauce/soy sauce, 2 tablespoons fish sauce, and 1 tablespoon sugar. Stir and mix well, lower heat, let simmer for 10 minutes
Mean while cook the rice flake and drain
 Stir cooked rice flake into the ground pork mixture. Add in fresh bean sprouts and fresh chopped coriander. Bring heat back to medium. Seasoned with a little more seasoning sauce, fish sauce, a little sugar,  ground black pepper. Add in chopped fresh Chinese spring onions. Stir and cook for another 4 minutes.



 I served a little of stir fried dish with steamed rice and Asian style salmon.
Or served with a side of my homemade pork springrolls


Sheriff in a lunch box

This is for my son's lunch tomorrow. Earlier I had made Tow Mater and Lightning McQueen sandwiches. Today I had made him The Sheriff sandwich from the movie Disney Pixar Car. The Sheriff sandwich is made with bologna, Gouda cheese, salami, cheddar, nori, mayonnaise with 2 slices of bread shape into a car, served with side salad. 

 Didn't take too long to make.

Fresh Covered Strawberries

 Fresh strawberries + Cheesecake filling + Crumbled Graham Crackers = Heaven in your mouth. 


 I made these for myself for my Friday snack which I needed with what I went through this week. I had to make extras because I knew my family would love these. My husband said to me, " I would only have just one." Instead he had 5. Both my girls loved my cheesecake filling. My husband and I love cheesecake. We both agree Norwegian cheesecake can not beat American Cheesecake. It's not as sweet and honestly it taste bland.


Simple Cheesecake filling
1/2 cup Philadelphia cream cheese
1/2 cup sour cream
1/3 cup sugar
1 tablespoon vanilla extract

In a bowl mix all ingredients and whisk well with an electric whisk until smooth and fluffy. One at a time take fresh strawberries dip into the cheesecake filling and coat with very fine crumble Graham crackers. Serve with extra cheesecake filling as dip.

Fun Lunches for kids





It has been a busy week. I'm surprise at myself of having the time to make these with work, kids, house work, errands, etc, etc. I don't know where I get the energy. I don't drink coffee or drink any of those energy drinks.

I have not been on for a week because both my daughters had been sick and I had been busy with taking care of my kids and trying my best with work. I had what the girls had during the weekend. Today I'm doing so much better. My kids asked me to make them sandwiches. I had made Ninjago, a house, and specifically requested beyblade

Hot Coco cup sandwiches

Today's lunch I've made hot chocolate cup sandwiches for my kids. I had fun making these. Who doesn't like Nutella? I cut slices of bread shaping into coffee mugs and decorated it with smores goldfish which I bought while I was in Sweden. Nutella as the hot chocolate and topped with mini marshmallows. Served with bananas and fruit jello. I had bought 1500grams of  Nutella, was on offer at Euro Cash. (750 grams of Nutella) 2 for 79 Swedish Kroners and I know you can't find a good deal like that in Oslo or anywhere in Norway. I have to admit though Nugatti is slightly better than Nutella. Nugatti is like the Nutella but the Norwegian way.

Cambodian and a birthday celebration

This weekend in our family we celebrated a little Cambodian New Year and Leilani's Birthday. She is turning 2 years old on Monday. My children are mixed with American/Norwegian/Cambodian. My family side (my parents) are Cambodian. They both are from Cambodia and migrated to United States because of the war and to have a better life. My siblings and myself are Cambodian American we were all born in New England. My husband and his family are Norwegian. In our family I speak English to my children and my husband speaks Norwegian. Our children speaks both languages. We don't speak Khmer. I do understand Khmer and know little of speaking it. But it's a shame, I wish I can be fluent in Khmer. 
Today I had made Cambodian Loc Lac. It's delicious and easy to make.  Leilani never had it until today and she loved it. She kept asking for more. For desert I had made Crispy Coconut Fried Banana with ice cream and chocolate ganache.

Ingredients
3 tablespoons vegetable oil
3 tablespoons sugar
4 tablespoons minced garlic
1 1/2 tablespoons freshly ground black pepper
1/3 cup mushroom soy sauce
3 tablespoons seasoning sauce

Garnish
rapid lettuce
2 tomatoes sliced
sliced scallions (green part)

Marinade beef
dash of salt
1 tablespoon sugar
1 tablespoon sugar
1 tablespoon minced garlic
1 tablespoon seasoning sauce
1 teaspoon freshly ground black pepper
3 tablespoon vegetable oil
2 1/2 lbs sirloin( I used entrecote), sliced thin

In a large bowl marinade beef by combining all ingredients and let sit for 1 hour.


Lime Sauce
2 tablespoons sugar
1 teaspoon salt
1/4 cup freshly squeezed lime juice
1/4 cup water
1 teaspoon freshly ground black pepper
2 teaspoon chopped garlic

In a bowl stir sugar and salt into the lime juice until well dissolved. Add water, black pepper, and garlic and mix well. Covered, set aside, until ready to serve.

Heat up a saute pan at medium/high heat. Until hot add vegetable oil, sugar, garlic, onions, black pepper and stir until caramelized about 30 seconds. Then add marinated beef and stir over very high heat for 3 minutes. Add 3 tablespoon mushroom soy sauce, 2 tablespoons seasoning sauce and stir. Cook for another 3 minutes.

I cooked the beef medium to well done. I pour evenly my lime sauce over loc lac.

Garnished my plates with lettuce, tomatoes and added loc lac on top of the lettuce. Sprinkled with chopped scallions and served with jasmine rice. 





In a bowl crack 1 egg, tablespoon coconut powder, 2 tablespoon sugar. Whisk well. Sliced 2 bananas total 8 sliced bananas. Add into egg mixture, soaking well. 
 In another bowl combine 1/2 cup bread crumbs and 1/2 cup coconut flakes. Transfer soaked bananas to the crumb/flake mixture. In a pan on medium/high heat add 3 tablespoons coconut oil. When pan hot fry the banana. 4 minutes on each side until brown/crispy.

Serve with homemade chocolate ganache and vanilla ice cream.

For my daughter's early birthday treat I made her a light muffin with nutella, chocolate, and marshmallow. She ate about 4 of these.

Angry Bird homemade pizza


My son got 26/27 right on his test. 
I made an angry bird out of salami on my homemade pizza. I've been told this is one of the best pizzas I've made. No more ordering pizzas or buying frozen pizzas.

Red wine risotto with bacon and spinach

It was one of those days. Something I had in my kitchen and made red wine risotto with bacon and spinach.   Red wine I used is from Chili which went great with this risotto dish.


 First I diced 6 slices of bacon and cook with olive oil until crisp. Drain on paper towel and set a side.

In the same skillet add a tablespoon olive oil and added 1 large diced onions and 2 clove garlic. Saute for 8 minutes
 Then I added in 1 1/2 cup Arborio rice to the saute onions and garlic. Cooked rice until translucent on the outside for about 3 minutes.

 Added a cup of red wine and....
 2 cups of broth at a time to the risotto. Lower heat and let simmer. Kept stirring and stirring until it began to dry out and added some more broth and wine.
 Add in spinach, Parmesan, and more broth until rice is tender.
Simmering and stirred frequently so it doesn't stick and burn. 
 When rice is tendered remove from heat and season with salt for taste

Serve on a plate with crisp bacon and grated Parmesan cheese
