Welcome to my ScandinAsian food blog. A blog about what I like to make in my little Norweigan kitchen, from homemade meals to fun creative sandwiches. My parents gave me the name Sorieya, a Cambodian name, which means sun. I'm originally from the United States. Now I'm currently living in Norway, married to a Norwegian man with 3 beautiful children. It's hard being away from my family back in the States and I miss them everyday. I am not an artist but I love making fun sandwiches for my kids. I am not a professional chef but I love to cook and I love being in the kitchen. I love introducing my children to different kind of international food, introducing food from my childhood and explaining to my kids the history about their culture and food. I love spending those quality time together teaching my little ones how to make bread, Khmer food, and teaching me Norwegian. My Norwegian isn't that great but I do understand just the basics but speaking it, that's another story.

Homemade Cinnamon Oat Muffins

For my little kantina I've made homemade cinnamon oat muffins to sell. Will be serve with a side coffee. I love the smell of fresh baked muffin.

I used
1 3/4 cup all purpose flour
1/2 cup oatmeal (apple/cinnamon)
1 1/2 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon nutmeg
1 teaspoon vanilla
1 1/2 teaspoon cinnamon
1/3 cup melted butter
3/4 cup sugar
1 egg
3/4 cup regular milk

1/4 cup melted butter

1/3 cup sugar
1 tablespoon cinnamon

In a large bowl combine the first 7 dry ingredients

In another bowl combine and whisk butter, sugar, egg, and milk. Then add into the flour mixture. Whisk and combine all well, mixture will be lumpy.

Spoon in mixture into each muffin tin and bake in the oven for 25-30 minutes until golden or until a wooden pick inserted in center comes out clean.

Put butter in a separate bowl and in another bowl add in sugar and cinnamon. After muffin cools, take one muffin at a time. Dip the top with melted butter and then sprinkle with sugar/cinnamon. Serve with coffee.
