Welcome to my ScandinAsian food blog. A blog about what I like to make in my little Norweigan kitchen, from homemade meals to fun creative sandwiches. My parents gave me the name Sorieya, a Cambodian name, which means sun. I'm originally from the United States. Now I'm currently living in Norway, married to a Norwegian man with 3 beautiful children. It's hard being away from my family back in the States and I miss them everyday. I am not an artist but I love making fun sandwiches for my kids. I am not a professional chef but I love to cook and I love being in the kitchen. I love introducing my children to different kind of international food, introducing food from my childhood and explaining to my kids the history about their culture and food. I love spending those quality time together teaching my little ones how to make bread, Khmer food, and teaching me Norwegian. My Norwegian isn't that great but I do understand just the basics but speaking it, that's another story.

Chicken tikka masala

I had fresh chicken breast in the fridge and I felt like making Chicken Tikka Masala for tonight's dinner. My boys wanted seconds, they thought it was really good and it was not too spicy.

3 tablespoon butter
1 jalapeno, minced
5 garlic cloves, minced
4 tablespoons ginger, minced
2 teaspoons ground coriander
2 teaspoons ground cumin
2 teaspoons paprika
2 tablespoon tomato paste
2 teaspoons garam masala
1 teaspoon salt
1 can tomato sauce
6 tomatoes, diced
1 cup måt fløte (food cream/heavy cream/ or half&half)

In a large bowl, I mixed together about 1/2 cup plain yogurt, ginger, garlic, salt, black pepper, seasoning sauce, paprika and poured over cut up chicken breasts. Covered, refrigerated, and let marinade for couple hours.

In a large sauce pan on medium heat, I added tablespoons butter, when melted add in garlic, ginger, jalapeno, minced onion cooked for about 2 minutes. Seasoned with coriander, cumin, paprika, garam masala, and salt. Then I stirred in tomato paste and cooked for 4 minutes. Stirred in diced tomatoes and tomato sauce. Brought to a boil and turn down to a simmer and cook for half hour.

Meanwhile using a grill pan on medium to high heat, I brushed a tablespoon oil and grilled my marinade chicken breast, cooked for about 4 minutes. When all chicken were cooked I placed chicken into my sauce and simmered for 10 minutes. Then I stirred in cream and let simmer for about 5 minutes for sauce to thicken. When done serve with hot steamed rice. I didn't have any cilantro and most grocery stores were closed so I had to do without.
