Welcome to my ScandinAsian food blog. A blog about what I like to make in my little Norweigan kitchen, from homemade meals to fun creative sandwiches. My parents gave me the name Sorieya, a Cambodian name, which means sun. I'm originally from the United States. Now I'm currently living in Norway, married to a Norwegian man with 3 beautiful children. It's hard being away from my family back in the States and I miss them everyday. I am not an artist but I love making fun sandwiches for my kids. I am not a professional chef but I love to cook and I love being in the kitchen. I love introducing my children to different kind of international food, introducing food from my childhood and explaining to my kids the history about their culture and food. I love spending those quality time together teaching my little ones how to make bread, Khmer food, and teaching me Norwegian. My Norwegian isn't that great but I do understand just the basics but speaking it, that's another story.

Homemade pizza bagels


Today I made homemade pizza bagels for late dinner. This came out really yummy. I was surprised that my daughters ate one each because they really don't like pizza so much. It was a success with my kids and my husband thought it was delicious too and he loved the pizza sauce. 

1 red onion, sliced
1 yellow bell pepper, sliced
1/2 cup sliced mushrooms
1/2 cup sun dried tomatoes, diced
1 cup prosciutto, chopped into small pieces
2 tablespoons tomato pure
14 oz tomato sauce
1/2 teaspoon ground black pepper

4 cheese shredded (mozzarella, cheddar, Jarlsberg, and norvegia)

In a large pan heat up a tablespoon olive oil on high heat. When oil was hot stirred in onion, bell peppers, and mushroom. Sauteed for 4-6 minutes, then added in chopped prosciutto and cooked for another 5 minutes. Stirred in tomato sauce and 2 tablespoons tomato pure, seasoned with a dash of salt, pepper, and Herbes De Provence with garlic. Lowered heat and cooked for 8 minutes and removed from heat.

Sliced my homemade bagels (12 slices), spread on each bagel slices with my sauce w/ vegetables and prosciutto. Added 2 slices of pepperoni on each bagels and topped with shredded 4 cheese. Placed on a baking rack and  baked in the oven on 400 degrees F for about 8 minutes until cheese melted.


Bagel
2 cups and 2 tablespoons all purpose flour
1 package active dry yeast
3/4 cup warm water
1 tablespoon sugar
1 teaspoon salt

In a large bowl I combined flour and yeast. Then mixed in water, tablespoon sugar, and salt together. Mixed with my hand and added enough flour to make a stiff dough. Turned dough onto a lightly floured surface and knead until it was smooth and elastic. Then covered and let rest for 20 minutes.

Cut dough into 6 pieces. Shaped into smooth round ball. Made a hole in the center of dough ball with my finger and gently enlarge the whole just while shaping into a bagel. Covered again and let rise for another 20 minutes.

In large pot  boiled a liter water, then added a tablespoon baking soda, and a tablespoon sugar mixed well. Reduced heat to simmered.

I placed bagels into the water and cooked for 6 minutes, turning once. Drained and placed them on a greased baking sheet. I seasoned a few with some herbs and a little sea salt. Baked in the oven at 400 degrees F for 30 minutes. Removed from the oven and let cooled.

Beef and Bacon Stew

The weather in Norway is getting cold and dark. What would make my husband happy is one of his favorite dish, one of my homemade stews. I made beef and bacon stew just for him. For some reason he think stews taste better the next day. Whatever make him happy.


2 1/2 quarts water
1 cup carrots, peeled, diced into small bite size

1 cup potatoes, peeled, diced into small bite size
dash salt
Olive oil
2 bay leaves
4 beef bouillon
2 onion, diced
1 1/2 lbs okse lapskaus kjøtt ( beef stew meat) cut into cube seasoned with salt, black ground pepper, other spices and herbs, seasoning sauce, Worcestershire sauce, 3 tablespoons corn flour.
8 slices bacon, chopped small size
3/4 cup beef stock
2 tablespoons cup white wine
2 tablespoons heavy cream
1 cup peas


In a large soup pot filled with 2 1/2 quart water, added in 1 cup chopped potatoes and 1 cup chopped carrots, 2 bay leaves, a dash of salt, 4 cubes of beef bouillon, and drizzle a little olive oil.  Boiled vegetable until tendered for 30-40 minutes.



Cut stew meat in bite size and seasoned with herb and spices. A couple tablespoons seasoning sauce and couple tablespoons corn flour. Mixed well with my hands and set a side. Then I chopped 8 slices bacon into small bite size. Chopped 2 onions and 3/4 cup of beef stock on the side.
While vegetable was boiling for half hour, remove bay leaves with a ladle. 
In a large pan on high heat, heated a few tablespoons margarine. When melted added in onions and bacon sauteed for 5-7 minutes. Then stirred in marinaded coated beef meat, stirred and cook for 10 minutes Slowly poured in beef stock, white wine, and heavy cream. Stirred and cook until sauce was thickened. Transfer beef and bacon into soup pot that is already filled with vegetable and broth. Add in peas and let simmer, covered, and cook for 15- 30 minutes. I ladled about 1/2 cup broth in a saucepan with 2 tablespoons heavy cream and dissolved 3 tablespoons flour, on medium high heat whisked until sauce thickens and poured back into the stew. Stirred, covered, and let simmer until ready to serve.

Ladle into a bowl and serve with warm toasted baguettes.

3rd Birthday


Today is one of our daughter's birthday and our 7 years wedding anniversary. It's a very special day and a bitter sweet moment. Just remembering her when she was a newborn struggling with her illness, had our ups and downs but in the end I'm just so grateful and very thankful that she is healthy, happy, and with us. It's amazing to see her grow, listening to her laugh, her cute chipmunk voice, her smile that melts my heart. She is such a beautiful little girl, happy all the time. I'm so proud to have her as my daughter. 

I made her a cheddar cheese and turkey cake sandwiches. It has 3 cucumber stick as candles and cheddar cheese cut into 3 lights, her favorite black olives to go with it. She was so happy to see it. 

I made her mocha chocolate princess cup cakes with her favorite sweets on the side.

Beef is too expensive to buy in Norway, really costly. I don't think I would pay 70-100 or more US Dollars per kilo for a good quality beef especially imported beef and meat when you can get it cheaper in another country. So my husband took a little trip to Sweden the other day and bought beef, pork, and chicken. He also bought me some American products because he knew I was feeling a bit blue. He surprised me with 2 kilos of M&Ms, Reese peanut butter cups, Lindt chocolate, and mountain dews. I haven't had M&M for 2 years. He is my rock!

It's much cheaper to buy food in Sweden than in Norway. Seafood is about the same price. For a family with small kids, the prices on food and everything else in Norway, it's impossible to save. My husband and son have to have some red meatin their system. I wouldn't mind living in the border of Norway and Sweden though.

2 lbs sliced beef, seasoned with grilled/steak seasoning, Worcestershire sauce, ground black pepper, dash salt, hickory liquid smoke, corn starch, and other stuff, mixed well.
1-2 tablespoons cooking oil
2 large onion sliced
1 cup smoked ham, sliced small pieces
1 cup sliced mushrooms
100 grams Philadelphia cream cheese
3/4 cup beef stock


In a large pan heated tablespoons cooking oil on high heat. Added in sliced onions, stirred and cooked for 5 minutes. Then added in seasoned marinade beef, smoked ham, and mushrooms. Stirred and combined all for 6 minutes. Spooned in cream cheese, stirred and mixed well. Then poured in beef stock, stirred well, covered and cooked for 5-8 minutes on medium/ low heat. Removed cover seasoned with ground black pepper. Sliced a few sub bread in half, placed in 3 slices of Swedish cheddar cheese, and spooned in cheesy Philly steaks mixture, squeezed some Sriracha hot chilli sauce on top and served.

My whole family loved it. Good thing I made extra and stored in the freezer. They can't have this everyday.


Stuffed Entrecote

Entrecote filled with smoked ham, bacon, feta cheese, Philadelphia cream cheese, cream, spinach, and broccoli.

8 slices bacon, chopped into small bite size
5 slices smoked ham, chopped small bite size
1 onion, chopped
1 glove garlic, minced
2/3 cup crumbled feta cheese
100 gram Philadelphia cream cheese
1/2 cup måt fløte or cream
1 package baby spinach
1 cup lightly steamed chopped bite sized broccoli
pinch of salt
freshly ground black pepper

In a large pan on high heat. Heated 1 tablespoon olive oil. When hot I added in bacon and smoked ham. Cooked for 5 minutes.

Then added in chopped onions and minced garlic. Stirred and cooked for another 4-6 minutes.

Lowered heat to medium and stirred in crumbled feta cheese and cream cheese. Stirred well for 3 minutes.

Add in baby spinach, broccoli, cream, pinched of salt, and freshly ground pepper, stirred and mix everything well. Covered let simmer for 4-6 minutes.

Removed from heat and set a side.

I marinaded 4 entrecote for half hour. Then spread my cream bacon ham spinach/broccoli mixture on top of each entrecote. Rolled each steaks and pinned with tooth picks. Cooked stuffed entrecote on each side in a pan on high heat, ladle a bit of liquid from the bottom of the pan over the steaks. Covered and cooked about 7 minutes on each side. Placed stuffed entrecote on a cutting board and let rest for 6 minutes before slicing. In the same pan with leftover liquid from the steaks, on medium high heat I just added in about a cup of cream to make a sauce. Served with stuffed entrecote and potatoes.

With the left over cream ham, bacon, spinach, broccoli  mixture. You could make into twice baked potatoes. Baked the potatoes for 40 minutes until tendered. Removed potatoes from the oven. Set a side to cool off but still warm. Slice potatoes in half, scoop out inside the potatoes. Mashed together with the cream and vegetable mixture. Spooned back in the potato skins, sprinkled with shredded cheese and back in the oven. Bake for 10 minutes until the cheese has melted.

Or  you could use the left over cream ham, bacon, spinach, broccoli, mixture and mix it with fresh pasta. Bake in the oven for 20 minutes at 400 degress F. You have yourself a baked creamy bacon, spinach, and broccoli pasta casserole. 


Pokemon lunch

Today's lunch was Pokemon sandwiches served with sliced fruit and a little sweet. I used cheddar cheese for his face and body, cut into Pokemon shape. I used sushi nori and made cut outs for the tip of his ears, mouth, nose, and eyes. I cut out 2 little circles out of salami for his cheeks.

Owl sandwich

 The other day I made an owl sandwiches with turkey and gouda/cheddar cheese for my kids lunch. Made with wheat bread cut into an oval shape, gouda cheese for stomach and eyes with nori, cheddar cheese for the beak with side of sliced oranges and a yogurt.

Simple Chicken and broccoli stir fry.

This is a simple chicken and broccoli stir fry. One of my kids favorite Cambodian dish, almost the way my mom used to make for me when I was a kid.

1 lb chicken breast, sliced thin
1 tablespoon corn flour
1 1/2 tablespoons fish sauce 
2 tablespoons soy sauce
2 tablespoons oyster sauce
1 tablespoon sugar
3 clove garlic minced
1/4 cup chicken stock
1 medium yellow onion, sliced
2 lbs broccoli, cut into bite size ( lightly steamed)
1 stalk green onion, chopped
teaspoon ground black pepper

In a large bowl I added in a pound sliced chicken breast seasoned with gold mountain seasoning sauce, salt, black pepper, cayenne pepper, and corn flour mixed well. Set a side.

Heated up my wok on high heat. Added  few tablespoons oil. When oil was hot I added in my marinaded chicken and garlic. Stirred until meat was tendered about 5-8 minutes. Then I stirred in soy sauce, oyster sauce, fish sauce, and sugar, mixed well. Then stirred in about 1/4 cup of chicken stock, mixing well and sauce became a bit thick. Then I added 2 lbs of broccoli and green onions.Cooked for about 3 minutes more, not over cooking broccoli, seasoned with black ground pepper. Served with hot cooked rice.

Ninjago sandwiches

I made my son Ninjago sandwiches. I didn't have any light bread instead so I used wheat bread slices cutting out a retangular shape then add turkey meat, cheese spread, and cheddar cheese. For the eyes I cut out from sushi nori.
