About Me

My photo
Welcome to my ScandinAsian food blog. A blog about what I like to make in my little Norweigan kitchen, from homemade meals to fun creative sandwiches. My parents gave me the name Sorieya, a Cambodian name, which means sun. I'm originally from the United States. Now I'm currently living in Norway, married to a Norwegian man with 3 beautiful children. It's hard being away from my family back in the States and I miss them everyday. I am not an artist but I love making fun sandwiches for my kids. I am not a professional chef but I love to cook and I love being in the kitchen. I love introducing my children to different kind of international food, introducing food from my childhood and explaining to my kids the history about their culture and food. I love spending those quality time together teaching my little ones how to make bread, Khmer food, and teaching me Norwegian. My Norwegian isn't that great but I do understand just the basics but speaking it, that's another story.

Simple chicken stir fried noodles

This was a quick and easy meal. I used what I had in my pantry and what was in my refrigerator. I made easy chicken and egg stir fried noodles. My whole family loved it and thought it was very delicious.

1-2 tablespoons vegetable oil
2 clove garlic, minced
3 shallots, finely chopped
1 small red pepper, chopped

3 package ramen noodle. Boiled, drain, and set a side.
400 grams ground chicken. Seasoned with salt, pepper, garlic, seasoning sauce, oyster sauce, paprika, cayenne pepper. Mix well with hand. Set a side.-
2 egg scrambled and cook. Set a side.
In a bowl whisked together 2 tablespoon cornstarch and about 1/2 cup water. I added 1 tablespoon soy sauce, 1 tablespoon oyster sauce, 1 tablespoon fish sauce, 1 tablespoon sugar, and 1 beef bouillon. Whisk everything together until well mixed. Set a side.

1 1/2 cup chopped vegetables (Chinese cabbage, purple cabbage, leek)

1/2 cup corn kernel

Heated wok on high heat. Added 2 tablespoons vegetable oil. When oil was hot added  minced garlic, chopped shallots, and chopped red pepper in the wok, stirred for a minute, then stirred in seasoned/marinaded ground chicken. Cook for 2-4 minutes. Added in chopped vegetables and corn. Stirred everything well. Added cooked ramen noodle and cooked eggs, mixed and stirred everything well again. Added my thick sauce in the center of wok and stirred well so everything is coated with the sauce. Cooked for a couple minutes. Transfer on plate and served right away.
